Aldi Review: Baker's Corner PUMPKIN Quick Bread Mix

Baker's Corner Pumpkin Quick Bread and Muffin Mix

I reviewed the Baker's Corner Banana Quick Bread Mix recently - I liked it so much that I just had to give the pumpkin variety a try, and I'm glad I did!

The Baker's Corner Pumpkin Quick Bread turned out to be every bit as good as the banana bread, and was just as quick and easy to make. You only need to add a cup of water, three tablespoons of oil, and 2 eggs to the mix, stir until moistened, and bake at 350° for about 50 minutes.

I wouldn't hesitate to serve this to guests, or take a loaf to pot-luck dinner at church, or even make up a few to give as gifts. The texture is perfect and it tastes like it has all the typical pumpkin spices - allspice, cinnamon, ginger, nutmeg and clove.

Boy, oh boy, does that look fantastic, or what? I'll be surprised if that loaf lasts 'til tomorrow morning! Go ahead and pick up a box or two of these Baker's Corner Quick Bread mixes the next time you're at Aldi - they're seasonal items, so who knows how long they'll be available. I'm going to stash a couple in the pantry this week, just in case...

  3. Hi Jeff, good news and bad news....the good news is that you are right on about the Aldi onion dip! I am a Hellavagood Dip fanatic..and Aldi's is SO good too! I am a convert. The bad news is.....you were right on about the Aldi dip....now I know I will eat MORE of that and the good rippled chips....my thighs will never be the same! LOL Rosie

  4. HA! I know what you mean Rosie - I'm kinda regretting that I ever tried the dip - it's too good. And with it being so inexpensive, it's even harder to pass it by at the store.

    On the other hand, I now have a LOVELY matching set of recycled dip tubs for left-overs!

  5. I just happened across your blog the other day. You have changed my life. I used to be a name brand shopper, but no more!

    The reason for this comment is the Bakers Corner Brownies. I made them yesterday using cupcake liners (.59 at Aldi) and topped them with the black vanilla frosting (.79 at..where else?) for a quick Halloween treat.

    My oh my they were good. In fact, I can safely say that they were the best brownies I have ever tasted, and I have tasted quite a few! Slightly chewy, moist, and chocolatey, they are now my favorite brand. I cannot wait to try the other purchases. What fun! Look out though, Jeff; I might just be inspired enough to create MY OWN blog! Thanks again!

  6. It's amazing, isn't it? I had the very same reaction as you did - once I let go of my pre-conceived notions about Aldi vs. the National brands, and simply judged them on their quality - I was AMAZED at how well the Aldi products compared. I was hooked. When you take into account PRICE and QUALITY, Aldi is tough to beat. And, you don't have to spend hours a week organizing coupons and chasing sales all over town to save money! Naturally, not every product is a winner, and that's partly what helped inspire this blog.

    I'm so glad Aldi is working for you, and you're finding the blog useful! Go ahead and start your own blog if you're inspired enough - but until then, please feel free to come back and comment anytime!!!

  7. I just opened a box of Baker's Corner Banana Quick Bread and Muffin mix and there are black specks all throughout the mix. Is that normal?

  9. Has anyone tried to vary the instructions on either the banana or the pumpkin for pancakes? I have done it with some brand names, but have never tried it with Baker's Corner and thought since they are both marked down to $.49 here (lucky, I know) I just might buy them out and stock up...

  10. Here in central Indiana, they don't carry the pumpkin bread anymore When I asked the company, they e-mailed back, that it was a "special purchase item" ?? That it wasn't available any longer. Makes me wonder if they even understood my question.

    1. Yes, it sounds like the answer you got was incomplete at best! The pumpkin bread mix isn't stocked year-round, it's a seasonal item - you'll see it return to stores in the fall. The shelf life on these mixes is pretty good, I've stockpiled several and made them months later with no noticeable loss of flavor or texture.

      When you see them again, buy a few extras for the pantry!
