The total time spent to put this together was under an hour - here's how to do it:
First, pre-heat your oven to 375 degrees F, and grease a 4 x 8 loaf pan. I used a Pyrex loaf pan (I picked it up at a thrift store last week for just a dollar - cool!), and sprayed it with the Carlini Canola No-Stick Cooking Spray...

Next, you just dump the contents of the box, along with 3 eggs, 3 tablespoons of vegetable oil, and 3/4 cup of water into your mixing bowl...

And beat with a spoon, about 50 strokes - the directions on the box warn you that the batter may still be slightly lumpy...

And into the loaf pan it goes...

Pop it in the over for 45 to 50 minutes (know your oven and equipment, mine was ready to come out after about 40), and we're done...

The instructions on the box tell you to let it cool for a few minutes in the pan before turning it out onto a cooling rack, but I couldn't wait. I just had to try a warm slice right away...

As I said, this was a big hit with the family. It's moist, with a nice texture and great banana flavor, and it holds together like a bread should. It's not too sweet, and doesn't crumble apart in your hand when you try to butter it - in other words, it's not too "cake-y". I even popped a slice in the toaster this morning, and it toasted up fabulously!
I won't hesitate to buy this again. It also comes in a pumpkin variety, I think I'll pick that one up on my next trip.

I can't wait to pick up one of these. It looks like the bread mix would work just fine with a few additions if desired. I love putting nuts in banana bread. Not a problem here. Another idea would be to add chocolate chips and some red salad cherries to make "Bishop Bread". A person could even add some mushed up black bananas for a little stronger flavor.
ReplyDeleteI used to buy mini loaves of banana bread at Farmer's Market for $2 apiece to take on camping excursions. It would be cost effective to make some tiny loaves or cupcakes from this mix. That way the bread would be fresher, too
